Zucchini Noodles With Avocado Pesto & Cajun Shrimp

Ingredients

  • 1 zucchini
  • salt
  • 4 tbl Ex virgin Olive Oil
  • 2 clove garlic crushed
  • 1lb shrimps
  • 1 tbl Old Bay Seasoning
  • 1 avocado
  • Basil Leaves
  • 1/4 cup Pistachios
  • 1 tsp Lemon juice
  • Pepper

Instructions

  2. Turn Zucchini into noodles, sprinkle with salt and let it drain. if needed use paper towel to remove any moisture.
  3. While thats happening, put EV Olive oil in a saucepan, add crushed garlic, when slightly tender add Shrimps, cook for few mins, add Old bay Seasoning.
  4. In a blender add rest of the ingredients add oil to make a Pesto. Put shrimps in a bowl. In same saucepan add EV Olive oil and add zucchini noodles, when cooked add to Shrimps, add Pesto on top
