Zucchini Noodles With Avocado Pesto & Cajun Shrimp

Ingredients
- 1 zucchini
- salt
- 4 tbl Ex virgin Olive Oil
- 2 clove garlic crushed
- 1lb shrimps
- 1 tbl Old Bay Seasoning
- 1 avocado
- Basil Leaves
- 1/4 cup Pistachios
- 1 tsp Lemon juice
- Pepper

- Turn Zucchini into noodles, sprinkle with salt and let it drain. if needed use paper towel to remove any moisture.
- While thats happening, put EV Olive oil in a saucepan, add crushed garlic, when slightly tender add Shrimps, cook for few mins, add Old bay Seasoning.
- In a blender add rest of the ingredients add oil to make a Pesto. Put shrimps in a bowl. In same saucepan add EV Olive oil and add zucchini noodles, when cooked add to Shrimps, add Pesto on top
