Ingredients

  • vegetable oil spray
  • 1 cup Atkins Quick Cuisine bake mix
  • 1 cup almonds
  • 1 cup sugar substitute
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ cup vegetable oil
  • 4 large eggs
  • 1 medium zucchini
  • 1 teaspoon vanilla extract

Instructions

  1. 1. Raise the oven temperature to 350F. Grease an 8 by 4 loaf pan with vegetable oil spray.
  2. 2. Whisk together the bake mix, almonds, sugar substitute, cinnamon, nutmeg, salt, baking soda and baking powder in a large bowl. In another container, mix the oil, eggs, zucchini and vanilla extract.
  3. 3. Mix the zucchini mixture into try ingredients until they are all combined. Pour the batter into a pan. Bake it for about 45 minutes until its color will turn to golden brown.
